Toddlers and muffins...it´s a love story. My son is no exception, he is crazy about them! As a result, I have looked for and experimented with different muffin recipes. This is a great one for savoury veggie muffins, and it is really easy to make. I was really surprised by how great they taste!
Savoury veggie muffins

Total preparation time: 40 minutes
Ingredients:
Dry ingredients
2 cups of plain flour (or 1 cup plain flour+ 1 cup whole wheat flour)
3 tsp baking powder
1 tsp garlic powder
1 tsp paprika powder
1 tsp salt
a pinch of pepper (optional)
Wet ingredients
2 eggs
1 cup of milk
1/2 cup olive oil
Vegetables
2 medium carrots
1 zucchini
1/2 onion
Instructions:
Grate the carrots, zucchini and onion.
Squeeze out the excess juice from the veggies.
In a separate bowl, mix the dry ingredients (flour, spices, baking powder).
In a second bowl, mix the wet ingredients together (oil, milk, eggs).
Combine the wet and the dry ingredients.
Add the grated veggies to the mixture and combine.
Add the mixture to the muffin tray.
Bake in the oven for 20-25 minutes at 180 c degrees .
